On the road to the island of Oleron, discover the cradle of French oyster culture, the Marennes-Oléron Basin.
Renowned for the quality of its oysters, the Marennes-Oléron Basin is the first European oyster center with a production ranging from 40 to 60,000 tons depending on the year.
It is in these ancient salt marshes, which made the wealth of the territory for centuries with the production of salt, that we elaborate the famous fine, special or shoots clear.
it takes 3 years to raise an oyster and a few months to 'refine' it in clear, water basins. It is then that a microscopic alga, the blue navicle is fixed in the gills of the oyster, thus giving him its green color and its so much appreciated flavor.
To the south, a canal connects Marennes to Seudre, the Cayenne, which crosses the vast expanses of clear, typical with its oyster cabins with bright colors.
Rich in protein and vitamins, oysters are excellent for our health. So, good tasting!
